How to dance when the music stops?

I've seen this a couple times before, and I've been trying to look it up, but I've been getting irrelevant results. Before I learn how to do it, I guess I need to know how to say what I'm talking about.

Examples of songs can be "Blue Suede Shoes," "Rock Around the Clock," and "Happy Days."

When the music just stops, and resumes, stops, and resumes!
People were dancing all kinds of things on the dance floor, swing, two step, etc. But when the music hits these stops, EVERYONE STOPS. They just freeze with the music, which is really cool.

What exactly is this music break called, and how do you do dance to it?

When the music stops in the song, it's called . . . a break.

When people stop dancing when the music stops it's called . . . hitting the break.

You can just keep dancing if you want, but that mean's you aren't actually dancing to the music. People stop dancing because the music stops playing, and resume when the music starts again. It makes sense because dancing is supposed to be an extension of the music.

One of the simplest moves you can do to hit the break is called a "quick stop". Here's an example of how to do the quick stop:
